Possibilities of modifying production top-fermented beers

Abstract:

Diplomová práce se zabývá možností modifikace receptury pšeničných piv při použití pšenic s červeným perikarpem a modře zabarvenou aleuronovou vrstvou zrna. V první části se práce zaměřuje na popis klíčových pivovarských surovin. Dále je v práci shrnuta problematika produkce sladu i princip výroby svrchně kvašených piv. V praktické části byly zhotoveny slady ze tří odrůd barevných pšenic (PS Karkulka, Rosso, Skorpion) ve třech různých režimech dotahovacích teplot hvozdění. Z těchto sladů bylo uvařeno 15 laboratorních vzorků pšeničných piv, u kterých byla hodnocena jejich senzorická jakost, základní parametry piv (obsah alkoholu a extrakt původní mladiny) a světlost barvy. Z receptury, která byla hodnocena jako senzoricky nejkvalitnější, byla poté zhotovena poloprovozní várka pšeničného piva. Dále došlo k testování vhodnosti kombinace námi navržené receptury s dalšími kořenícími látkami používanými v pivovarnictví, jako jsou pomeranč s koriandrem a studené chmelení. U těchto vzorků byly opět stanoveny základní parametry piva, světlost barvy a provedeno senzorické hodnocení. Všechny výsledky byly statisticky zpracovány.

Abstract:

This master thesis deals with the possibility of modification of the wheat beer recipe using wheat with red pericarp and a blue stained aleurone layer of grain. The first part focuses on description of key brewing raw materials. The thesis also summarizes the problems of malt production as well as the principle of production of top fermented beers.In the practical part, malts from three varieties of colored wheat (PS Karkulka, Rosso, Scorpion) were made in three different modes of tightening temperature of the wooding. From these malt, 15 laboratory samples of wheat beers were brewed and their sensory quality, basic beer parameters (alcohol content and extract of the original wort) and lightness were examined. The recipe, which was rated as the highest quality sensory, was then made by a pilot brew of wheat beer. We also tested the suitability of the combination of our recipe with other spices material used in brewing, such as orange with coriander and dry hop. The basic parameters of beer, color lightness and sensory evaluation were again determined for these samples. All results were statistically processed.
