Occurence of biogenic amines in ciders

Abstract:

Bakalářská práce je zaměřena na obsah biogenních aminů v ciderech. Tedy se zabývá i charakteristikou samotného alkoholického nápoje cideru. Dále je zde popsán vliv biogenních aminů na lidský organizmus ve smyslu fyziologických funkcí, ale také toxikologických účinků a projevů působení vysokých hladin těchto látek v organizmu člověka. Zároveň se práce věnuje podmínkám, které ovlivňují výskyt a tvorbu biogenních aminů v potravinách, což souvisí také s bezpečností a kvalitou potravin v závislosti na množství biogenních aminů v potravě. Zmíněny jsou hodnoty biogenních aminů v ciderech prodávaných na českém, španělském a francouzském trhu. Práce se zabývá taktéž možnostmi stanovení biogenních aminů. Cílem práce bylo vypracovat přehled výskytu biogenních aminů v ciderech, vzhledem k rostoucí oblibě tohoto nápoje, kdy je v České republice sledována každoročně se zvyšující spotřeba ciderů. Navíc množství prací, které by se věnovaly výskytu biogenních aminů v ciderech, je nepoměrně méně oproti pracím, které se věnují výskytu těchto látek v jiných alkoholických nápojích, jako víno či pivo. V již provedených studiích bylo zjištěno, že biogenní aminy, se v ciderech vyskytují. V ciderech jsou evropskou legislativou stanoveny maximální limity pro kontaminující látky, konkrétně patulin, olovo, kadmium a cín. Co se týče biogenních aminů, legislativa určuje maximální limity pouze pro histamin, a to jen v rybách a rybích produktech. Jako nejčastěji se vyskytující biogenní amin v ciderech byl v několika pracích detekován tyramin. Pro tento biogenní amin nejsou v současné době stanoveny limity, i když i tento biogenní amin může způsobit zdravotní potíže. Vzhledem k uvedeným faktům je důležité se problematice výskytu biogenních aminů v ciderech věnovat

Abstract:

A bachelor thesis is focused on the content of biogenic amines in ciders. It also deals with the characteristics of the cider itself. It also describes the effect of biogenic amines in the human body in terms of physiological functions, but also toxicological effects and manifestations of high levels of these substances in the human body. The work deals with the conditions that affect the occurrence and formation of biogenic amines in food, which is also related to food safety and quality depending on the amount of biogenic amines in food. The values of biogenic amines in ciders sold on the Czech, Spanish and French markets are mentioned. The work also deals with the possibilities of biogenic amines determination. The aim of the work was to create an overview of the occurrence of biogenic amines in ciders, due to the growing popularity of this drink, when the annually increasing con-sumption of ciders is monitored in the Czech Republic. The amount of works that would deal with the occurrence of biogenic amines in ciders is disproportionately less than the works that deals with the occurrence of these substances in other alcoholic beverages, such as wine or beer. In studies already performed, it has been found that biogenic amines are detected in ciders. European legislation sets maximum limits for contaminants in cider, namely patulin, lead, cadmium and tin. The legislation sets maximum levels for biogenic amines only for histamine, and only in fish and fish products. Tyramine has been detected as the most common biogenic amine in ciders in several studies. There are currently no limits for this biogenic amine, although this biogenic amine can cause health problems. Given to the above facts, it is important to follow up the issue of biogenic amines in ciders
