Current Issues of Meat Processing and Marketing of Meat Products in Different Sales Modes

Abstract:

Správné provedení porážky prasete má velký vliv na kvalitu a vlastnosti masa. Dodržování welfare zvířat kontroluje Státní veterinární správa. Návaznost technologických kroků výroby masných výrobků je důležitá pro konečné senzorické i hygienické vlastnosti. Pokud má být výrobek uveden na trh, musí být vyroben ve schváleném a registrovaném provozu a maso pocházet ze schválených jatek. Pokud jsou splněny podmínky vyrobeného množství a oblasti prodeje, může být podnik pouze registrovaný pro přímý prodej spotřebiteli. Těchto podniků je v České republice více než těch, které jsou i schválené. Schválených masných výroben je v Jihomoravském kraji a Kraji Vysočina přibližně stejné množství. Registrovaných masných výroben je více v Jihomoravském kraji.

Abstract:

The correct way of slaughtering a pig has a great influence on the quality and characteristics of the meat. Compliance with the welfare of animals is controlled by the State Veterinary Administration. The consistency of the technological steps in the production of meat products is important for the final sensory and hygiene characteristics. If the product is to be placed on the market, it must be produced in an approved and registered establishment and the meat must come from an approved slaughterhouse. If the conditions of quantity produced and area of sale are met, the holding can only be registered for direct sale to the consumer. There are more such businesses in the Czech Republic than those that are approved. There are approximately the same number of approved meat establishments in the South Moravian Region and the Vysočina Region. There are more registered meat establishments in the South Moravian Region.
