Správné provedení porážky prasete má velký vliv na kvalitu a vlastnosti masa. Dodržování welfare zvířat kontroluje Státní veterinární správa. Návaznost technologických kroků výroby masných výrobků je důležitá pro konečné senzorické i hygienické vlastnosti.
