Price policy of gastronomic establishments in Prague in years 2018 - 2022

Abstract:

The master dissertation, which focuses on the topic Price policy of gastronomic establishments in Prague in years 2018-2022, focuses on the main events that occurred in the outlined years and traces how these events influenced the development of the price policy of individual establishments. The purpose of the thesis is to evaluate how the gastronomic enterprises used price when the market situation changed in the period 2018-2022. For the elaboration of the research on the issue, the methods of historical data collection and social network analysis were used. Through these methods, data for the study period of 2018-2022 was collected from the materials posted by the selected enterprises on their social networks. In the data processing, the daily menu price trend was observed by looking at the price of lunch, which included the price of soup and main meal. The businesses that were subject to the research were selected based on their location and focus on the same customer segment. The selected locations of the enterprises were the districts of Prague 1 and Prague 8. Subsequently, the price development was examined in relation to the market situation for each urban area. It was found that during the period when the market situation was prosperous, the prices of the commodities under investigation remained relatively stable. At times when the market situation was deteriorating, prices increased in both districts and were first to increase in Prague 8, where prices increased more significantly. On the basis of the findings, specific measures were proposed which should be followed by gastronomy establishments in order to retain existing customers and to reach new customers not only in times of unfavourable market development.

Abstract:

Diplomová práca, ktorá sa zameriava na tému Cenová politika gastronomických podnikov v Prahe v rokoch 2018-2022 sa zameriava na hlavné udalosti, ktoré vo vytýčených rokoch nastali a sleduje, ako tieto udalosti ovplyvnili vývoj cenovej politiky jednotlivých podnikov. Cieľom práce je zhodnotiť, ako je zhodnotiť, ako gastronomické podniky využívali cenu pri zmene trhovej situácie v sledovanom období rokov 2018-2022. Pre spracovanie výskumu na danú problematiku boli využité metódy historický zber dát a analýza sociálnych sietí. Prostredníctvom týchto metód boli zozbierané dáta za sledované obdobie rokov 2018-2022 zmateriálov zverejnených vybranými podnikmi na svojich sociálnych sieťach. Pri spracovávaní dát bol sledovaný vývoj cien denného menu, pri ktorom sa pozeralo na cenu za obed, do ktorého sa zaraďovala cena polievky a hlavného jedla. Zvolené podniky, ktoré podliehali výskumu boli vybraté na základe ich umiestnenia a zamerania na rovnaký segment zákazníkov. Za zvolené lokality skúmaných podnikov boli mestské časti Praha 1 a Praha 8. Následne sa skúmal vývoj cien v súvislosti s vývojom trhovej situácie za jednotlivé mestské časti. Bolo zistené, že v období, kedy trhová situácia prosperovala, ceny sledovaných komodít zostávali pomerne stabilné. V čase, kedy bola situácia na trhu zhoršujúca sa, rástli ceny v oboch mestských častiach a ako prvé sa navyšovali v mestskej časti Praha 8, kde ceny rástli výraznejšie. Na základe zisteného boli navrhnuté konkrétne opatrenia, ktoré by mali gastronomické podniky dodržiavať v snahe o udržanie si stávajúcich zákazníkov a oslovenie nových zákazníkov nie len v čase nepriaznivého vývoja trhu.
