Abstract:

Táborská Martina, Hygiena a dezinfekce v kuchyních a stravovacích provozech, Bakalářská práce, Vysoká škola hotelová v Praze 8, spol. s. r. o., Praha: 25. 04. 2013, 48 stran Bakalářská práce pojednává o hygieně a dezinfekci v kuchyních a stravovacích provozech. Toto téma je a vždy bude aktuální. V současné době, kdy se stravovací zařízení potýkají s malou návštěvností, by nemělo docházet ke snižování hygienické úrovně. Špatná hygiena a nedodržování hlavních legislativních požadavků vede k přímému ohrožení zdraví konečných spotřebitelů. Nejdůležitějším krokem v rámci hygieny je zachování zdravotní nezávadnosti potravin. Hlavním cílem této práce je zhodnotit znalost hygienických požadavků, které jsou stanoveny legislativou Evropské unie a České republiky, provozovatelů restauračních zařízení na Praze 5. Centrum této městské části v budoucnu čekají rozsáhle infrastrukturní změny, které budou mít vliv na rozvoj turistiky i života, proto jsou tyto změny hlavním důvodem, proč je zkoumání znalosti hygienických požadavků zaměřeno právě na tuto městskou část. Dalším cílem bakalářské práce je vytvořit práci, která by provozovatele informovala o nejzákladnějších hygienických podmínkách, které ukládá platná legislativa a vymezila nejdůležitější skutečnosti, které se týkají hygieny ve stravovacích provozech. První část práce je tedy věnována vymezení problematiky. Jsou zde charakterizovány stravovací služby, popsány nejzákladnější legislativní prvky, které se týkají daného tématu. Největší část je věnována nejdůležitějším hygienickým požadavkům, které se v provozovně musí dodržovat a systému kritických kontrolních bodů (HACCP). Druhá část je věnována hodnocení výsledků zjištěných během písemného a ústního dotazování. Výsledkem je dobrá znalost legislativních požadavků, ale s nedostatky, které se týkají závažných skutečností. Proto by se provozovatelé restauračních zařízení na Praze 5 měli více informovat o hygienických požadavcích na provozovny stravovacích zařízení, které se týkají především výrobního úseku provozovny.

In this time when people eat less in catering establishments, there should not be to reduce the level of hygiene. Poor hygiene and not abiding by the major legislation is connected with direct threat to the health of final consumers. The most important step within hygiene is keeping the food safety. The main aim of this dissertation is to appraise knowledge of operators of restaurants in Prague 5 within hygiene requirements which define the legislation of the European Union and the Czech Republic. The centre of this urban part of Prague will be reconstructed in the future. This area will be affected by large infrastructure changes which will influence growth of tourism and life in this urban part. That is why these changes are the main reason why appraises knowledge of operators of restaurants is focused to this urban part. Another aim of this bachelor´s thesis is to create a thesis which the operator to inform about the most basic hygienic conditions which define the legislation and identified the most important facts concerning hygiene in catering establishments. The first part defines the main problem. The catering establishments are characterized and the main legislation are described. The largest part of this thesis is devoted to the most important requirements of hygiene which must be observed in catering establishment which also involves the system of critical control points (HACCP). The second part is about the evaluation of results of written and oral questions. The result is a good knowledge of the legislation, but with shortcomings which related to important facts. That is why operators of restaurants in Prague 5 should to be informed about the hygiene requirements and conditions which are concerned primarily with the kitchens of catering establishment.
