Abstract:

LIDMILA, Maija-Leeza. Využití Zvěřiny v Gastronomii: Sociální a Etické Aspekty. [Bakalářská práce] Vysoká škola Praha – Vysoká škola mezinárodních vztahů a Vysoká škola hotelová a ekonomická, sro Praha: 2022. 54 stran. Cílem tohoto příspěvku je prozkoumat postoje k lovu a konzumaci zvěře v různých kulturách – kanadské a české, s důrazem na opodstatnění výše uvedených procesů. Byly distribuovány dva totožné dotazníky v anglickém a českém jazyce a odpovědělo na ně celkem 206 kanadských a českých účastníků. Analýza výsledků ukázala, že v případě obou kultur existuje slabá korelace mezi sociálními faktory a postoji účastníků k lovu a konzumaci masa zvěře a silný vliv etických faktorů, jako je původ masa zvěře a spravedlivé zacházení. zvířete, ze kterého pochází. Opodstatněnost postupu závisela na druhu dotyčného lovu. Lov za potravou byl ospravedlnitelnější než pro jiné účely. V postoji obou respondentů k němu navíc hrály roli senzorické vlastnosti, tedy chuť zvěřiny. Bylo zjištěno, že kanadští respondenti mají k tématu silnější postoj než čeští respondenti, kteří projevovali mírnější pocity. Výsledky tohoto výzkumu jsou důsledkem studií a aplikací spotřebitelského chování a marketingu v oblasti gastronomie. Hlubší pochopení faktorů, které ovlivňují postoje spotřebitelů ke konzumaci ulovené zvěřiny, lze využít ke zlepšení marketingu zvěřiny jako gastronomického produktu.

LIDMILA, Maija-Leeza. The Use of Game Meat in Gastronomy: Social and Ethical Aspects. [Bachelor Thesis] University College Prague – College of International Relations and Institute of Hospitality Management and Economics, Ltd. Prague: 2022. 54 pages. The aim of this paper is to explore the attitudes towards the hunting and consumption of game in different cultures- Canadian and Czech, with an emphasis on the justification of the aforementioned processes. Two identical questionnaires were distributed in the English and Czech languages, and answered by a total of 206 Canadian and Czech participants. The analysis of the results showed that in the case of both cultures there was a weak correlation between social factors and participants attitudes towards hunting and consuming game meat, and a strong influence of ethical factors such as the origins of the game meat and the fair treatment of the animal from which it came. The justification of the process was dependent on the type of hunting in question. Hunting for food was more justifiable than for other purposes. In addition, sensory characteristics i.e. the flavour of game meat, played a role in both respondents attitudes towards it. Canadian respondents were found to have stronger attitudes towards the topic than Czech respondents, who displayed more mild feelings. The findings of this research are of consequence to the studies and applications of consumer behaviour and marketing in the field of gastronomy. A deeper understanding of the factors, which influence consumer attitudes towards eating, hunted game meats can be used to improve the marketing of game meat as a gastronomic product.
