Possibilities of Reducing SO2 Amount in Wine by Biological Method

Abstract:

Tato diplomová práce je zaměřena na možnost regulace obsahu SO\dindex{2} ve víně biologickou cestou. Popisuje formy a funkce SO\dindex{2} ve víně a charakterizuje biologicky aktivní látky vína. Uvádí metody stanovení oxidu siřičitého, antioxidační kapacity a polyfenolických látek. Dále se zabývá charakteristikou modelových odrůd Vitis vinifera L.Objekty zkoumání práce byly tři modelové odrůdy (Veltlínské zelené, Ryzlink rýnský, Rulandské modré) v průběhu vinifikace. V práci jsou uvedeny výsledky analýz volného a celkového SO\dindex{2} stanovené titrační metodou, celková antioxidační kapacita stanovená metodou DPPH a celkový obsahu polyfenolů stanovený Folin-Ciocalteuovou metodou. Na základě výsledků byly zjištěny změny analyzovaných parametrů v průběhu vinifikace u jednotlivých od-růd.Výsledkem řešení dané problematiky je návrh podrobnějších analýz chemického složení vína v průběhu vinifikace, které by vedly k snížení dávek SO\dindex{2}.

Abstract:

This thesis is focusing on the possibility of the content regulation of the SO\dindex{2} in the wine from the perspective of biology. It describes functions of SO\dindex{2} in the wine and also it cha-racterizes the bioactive compounds in the wine. The thesis mentions the methods to specify the sulphur dioxide, the antioxidant capacity and polyphenols content and also to acquaint with the characterization of the model varieties of Vitis vinifera L.Objects of the thesis we-re three model varieties (Green Veltliner, Riesling, Pinot Noir) in the vinification. In the thesis are results of the analysis of free and total SO\dindex{2} set by the titration method, the total antioxidant capacity set by DPPH method and the total content of polyphenols set by the Folin-Ciocalteu method. In pursuance of the results were determined changes of analysed parameters in the vinification on the individual varieties. The result of resolution of the given issue is recommendation of detailed analyses of the chemical content of the wine in the vinification which would lead to reduction of SO\dindex{2}.
