Determination of vitamin C in fresh fruit and vegetables

Abstract:

Diplomová práce na téma „Stanovení vitaminu C v čerstvém ovoci a zelenině“ je v první části zaměřena na charakteristiku ovoce a zeleniny, jejich chemické složení, nutriční hodnotu a účinky na lidský organismus. Dále je popsán vitamin C, jeho fyzikálně – chemické vlastnosti, reakce, stabilita a jeho význam pro organismus člověka. Následuje doporučení pro denní dávku člověka vitaminu C a jeho jednotlivé zdroje. V poslední řadě diplomová práce popisuje obecné metody stanovení vitaminu C. Hlavní částí diplomové práce je praktická část, kde na začátku je popsán materiál pro stanovení vitaminu C. Materiálem byly různé druhy ovoce a zeleniny. Dále navazuje metodika stanovení vitaminu C v čerstvém ovoci a zelenině pomocí kapalinové chromatografie. Výsledky zahrnují stabilitu vitaminu C, srovnání jednotlivých metod přípravy vzorků pro stanovení vitaminu C a nejvhodnější variantu. A v poslední řadě následuje vlastní měření vitaminu C u jednotlivých druhů.

Abstract:

Diploma thesis „Determination of vitamin C in fresh fruit and vegetables“ is in the first part focused on characteristics of fruits and vegetables, their chemical composition, nutritional value and effects on human organism. Furthermore, it describes vitamin C, its physico – chemical properties, reactions, stability and extraction and its importance for human organism. In following chapter, there is a recommendation for the daily human dose of vitamin C and its different sources. Lastly, the thesis describes the general methods of vitamin C determination. The main part of the thesis is the practical part. The material used for the determination of vitamin C is described at the beginning of this part. The material consisted of various fruits and vegetables. Furthermore, the methodology of determining vitamin C in fresh fruits and vegetables by liquid chromatography follows. In the results we can find the stability of vitamin C, comparison of individual methods of sample preparation for the vitamin C analysis and the most suitable variant. The actual measurement of individual species follows in this chapter.
