History and production technology of steamed cheese

Abstract:

Tato bakalářská práce se zabývá historií a technologií výroby pařených sýrů. V úvodu je popsaná historie vzniku sýrů od starověku až po moderní dobu. V následující kapitole je popsáno složení mléka a surovin, které mají vliv na kvalitu pařených sýrů. Stěžejní částí práce je technologický postup při výrobě pařených sýrů a popis možných vad vzniklých při výrobě. Další část práce je věnována sortimentu pařených sýrů vyráběných v České republice a po celém světě. Práce je zakončena jakostními požadavky na jednotlivé druhy sýrů a na analytické metody, které jsou využívány ke stanovení jednotlivých jakostních parametrů.

Abstract:

This bachelor thesis is focusing on history and production technology of steamed cheese. In the beginning there is part about history of cheese making since the Middle Ages till nowadays. The next chapter describes composition of milk and the ingredients which have effect on the quality of steamed cheese. Main part of the thesis describes technological process of making of steamed cheese and possible defects which can occur. In the next part of the thesis range of goods of steamed cheese from The Czech Republic and other part of the world is listed. The thesis is finishing with quality parameters of different types of steamed cheese and the analytical methods which are used for determination of individual quality parameters.
