Abstract:
V bakalářské práci je popsána mikroflóra baleného masa. Zabývá se chemickým složením masa a faktory, jež ovlivňují růst mikroorganismů. Největší část tvoří charakteristika mikroorganismů zapříčiňujících kažení baleného masa a mikroorganismů způsobujících vznik alimentárních onemocnění.
