Food allergens - occurrence, characterization, analysis

Abstract:

Tato bakalářská práce se zabývá potravinovými alergeny. V první části je uvedena charakteristika potravinové alergie, pojmenování, evidence alergenů a diagnostika potravinových alergenů. Ke zjišťování potravinových alergií jsou prováděny diagnostické testy např. Prick test, provokační test potravin kontrolovaný dvojitě slepým placebem, atopický epikutánní test atd. Ve druhé části práci je uveden výskyt alergenů ve vybraných druzích potravin jako např. kravské mléko, ryby, vejce, ořechy, obiloviny a mnoho dalších. Třetí část je věnována stanovení potravinových alergenů a to zejména metodám ELISA, hmotnostní spektrometrií nebo elektroforézou.

Abstract:

The thesis deals with food allergens. Characteristics of food allergy, description, registration and diagnostics of food allergens are mentioned in the first part. For the recognition of food allergies are performed diagnostic tests such as Prick test, double-blind placebo-controlled food challenge and Atopy Patch Test. Second part contains the information about the occurrence of allergens in selected foodstuffs: milk, fish, eggs, nuts, cereals and lots of others. In third part are presented method for determination of food allergens, especially ELISA, mass spectrometry or electrophoresis.
