Design and verification of teaching support for teaching the profession of chef - waiter

Abstract:

Diplomová práce se zaměřuje na vytvoření výukové opory pro obor kuchař-číšník. Teoretická část se skládá z literární rešerše, která hodnotí současný stav učebnic odborných předmětů, z charakteristiky oboru a souvisejících kurikulárních dokumentů. Výsledkem je vytvořená výuková opora pro předmět potraviny a výživa, který je vyučován ve druhém ročníku, a je koncipována tak, aby byla vhodná pro výuku žáků ve školním roce 2022/2023. V praktické části je tato opora podrobně popsána a zhodnoce-na. V práci jsou rovněž prezentovány výsledky dotazníkového šetření, které se věnovalo využití této výukové opory v praxi a poskytnutí zpět-né vazby od žáků.

Abstract:

This thesis is focused on creating educational support for the subject cook-waiter. The theoretic part consists of literary research which eva-luates the current state of textbooks for specialised subjects, characte-ristics of the subjects and associated curricular documents. The result is creating educational support for the subject of food and nutrition which is taught in the second year and is designed to be suitable for teaching in the school year 2022/2023. This support is described and evaluated in detail in the practical part of this thesis. This is where there are also presented the results of a questionnaire survey which is focused on using this educational sup-port in practice and providing feedback from students.
