The analysis of the concept of the Podolka restaurant

Abstract:

Bakalářská práce na téma Analýza konceptu restaurace Podolka je členěna do tří částí a to teoretickou, analytickou a návrhovou. V první teoretické části seznamuji čtenáře s pojmy gastronomie, stravovací služby, stravovací trendy dnešní doby, alternativní směry ve výživě, dále také s ekologickým zemědělstvím a historií a vývojem farmářských trhů. Ve druhé, analytické části práce popisuji vznik restaurace Podolka, její koncept a souvztažnost s farmářskými trhy, dále také vliv sociálních sítí. V této části práce byl proveden výzkum mezi hosty restaurace. Tento výzkum probíhal dotazníkovými šetřeními a to prostřednictvím přímého dotazování hostů. Cílem výzkumu bylo zjistit, jaké mají hosté o restauraci a farmářských trzích povědomí, jak jsou spokojeni s nabídkou jídel a produktů a díky jejich zpětné vazbě vytvořit návrhy na zlepšení, které uvádím v poslední, návrhové částí své bakalářské práce.

Abstract:

The bachelor thesis on the topic The analysis of the concept of the Podolka restaurant is divided into three parts, namely the theoretical, analytical and proposal ones. In the first theoretical part I introduce readers to the concepts of gastronomy, catering services, eating trends of today, alternative directions in nutrition, organic farming and the history and development of farmers' markets. In the second, analytical part of the Thesis I describe the establishment of the Podolka restaurant, its concept and the correspondence of the restaurant with the farmers' markets and the influence of social networks too. In this part of the work a research among restaurant guests was conducted. This research was realized through questionnaire surveys by direct inquiry of the guests. The aim of the research was to find out what awareness about the restaurant and the farmers' markets the guests have, how satisfied they are with the food and products they offer, and through their feedback, make suggestions for improvement, which I present in the last part of my bachelor thesis.
