Abstract:

V teoretické části diplomové práce je popsána historie bylinných piv na bázi piva, jejich legislativní požadavky, dále suroviny potřebné pro výrobu a technologie výroby. V praktické části bylo analyzováno 6 vzorků svrchně kvašených piv typu Ale. Pět z nich bylo připraveno s použitím chmele a byliny, v kontrolním vzorku byl k obohacení použit jen chmel. U těchto vzorků byl stanoven extrakt původní mladiny, obsah ethanolu, obsah veškerých polyfenolových látek, hodnota antioxidační kapacity metodou DPPH a FRAP. Také byla u všech vzorku provedena senzorická analýza.

Abstract:

The theoretical part of the thesis describes the history of beer - based herbal drinks, their legislative requirements, as well as raw materials needed for production and brewing proceses. In the practical part, 6 samples of top-fermented Ale-style beers were analyzed. Five of them were prepared using hops and herbs, in the control sample only hops were used for enrichment. The extract of the original wort, the content of ethanol, the content of all polyphenolic substances, the value of antioxidant capacity by the DPPH and FRAP methods were determined for these samples. Sensory analysis was also performed.
