New trends in yoghurt technology
Abstract:
Bakalářská práce se zabývá novými trendy při výrobě jogurtů a jogurtových výrobků. Popisuje jednotlivé technologické postupy od získání zdravotně nezávadného kravského mléka, až po vytvoření finálního výrobku. Rovněž se tato práce zabývá možnostmi analýzy důležitých složek těchto výrobků. Diskutovány jsou také zdravotní aspekty týkající se konzumace jogurtů a jogurtových výrobků.
Abstract:
The bachelor thesis deals with the new trends in production of yoghurt and yoghurt products. In this thesis there are described individual technological processes from obtaining of harmless cow's milk up to the creation of the final product.
