Abstract:

Cílem práce je analýza systému HACCP, vysvětlení základních pojmů a následné využití a zavedení systému. Bakalářská práce bude zaměřená na AHOLD Czech Republic, a.s., která provozuje v České republice maloobchodní síť supermarketů a hypermarketů Albert. Konkrétně se zaměřím na hypermarket Albert v Klatovech. Je to velkokapacitní a maloobchodní prodejna se širokým potravinářským a nepotravinářským sortimentem. Práce bude obsahovat dvě části. V teoretické části se budu zabývat analýzou rizik a stanovení kritických bodů systému HACCP (Hazard Analysis and Critical Control Point). Systém HACCP umožňuje společnosti Albert hodnotit a preventivě kontrolovat nebezpečí a rizika z hlediska bezpečnosti potravin. V aplikační části uvedu systém HACCP do praxe. Budu zde popisovat zásady bezpečnosti potravin. V závěru práce navrhnu různá opatření na zlepšení bezpečného skladování potravin.

Abstract:

The aim of this thesis is the analysis of the Hazard Analysis and Critical Control Points system, explanation of basic concepts and the subsequent utilization and implementation of the system. Bachelor thesis is aimed at AHOLD Czech Republic, Inc., which operates in the Czech Republic retail network of supermarkets and hypermarkets Albert. Concretly, I will focus on the hypermarket in Klatovy. It's a large capacity and a retail shop with a wide assortment of food and non-food. Work will consist of two parts. The theoretical part will deal with risk analysis and identification of critical points HACCP (Hazard Analysis and Critical Control Point). The HACCP system allows the company to evaluate Albert precautionary measure and control of the hazards and risks in terms of food safety. In the application of the HACCP system will bring into practice. I will describe here the principles of food safety. In the end of this thesis I will propouse various precaution to improve the safe storage of food.
