Chemical substances as food allergens

Abstract:

Tato bakalářská práce je zaměřena na chemické alergeny potravin. V první časti je uvedena charakteristika potravinové alergie, pojmenování a diagnostika alergenů, klinické projevy alergií a způsoby léčby. Je zde popsána příslušná legislativa České republiky, která se týká potravinových alergenů a jejich uvádění na obalech potravin. V druhé části je uveden přehled nejběžnějších alergenních potravin živočišného a rostlinného původu. Jedná se například o kravské mléko, vejce, ryby, obiloviny, sóju nebo jablka. Třetí část je věnována metodám, které se používají při zjišťování výskytu alergenů v potravinách. Nejčastěji používanými technikami jsou enzymová imunoanalýza a polymerázová řetězcová reakce.

Abstract:

This Bachelor thesis is focused on chemicals as food allergens. Characteristics of food allergy, nomenclature and diagnosis of allergens, clinical signs of allergy and methods of treatments are mentioned in the first part. This part also describes the relevant legislation of the Czech Republic, which relates on food allergens and putting them on food labels. The second part provides an overview of the most common allergenic foods of animal and vegetable origin (cow's milk, eggs, fish, cereals, soy or apples). The third part is devoted to methods that are used for identification of allergens in food. The most commonly used techniques are enzyme-linked immunosorbent assay and polymerase chain reaction.
