Chemical composition and analysis of beer

Abstract:

Cílem teoretické části bakalářské práce bylo vypracovat literární rešerši, která nastiňuje technologický proces výroby piva, chemické složení a chemickou analýzu hotového piva. Na úvod práce jsou zmíněny zdravotní účinky piva na lidské zdraví. V kapitole výroby sladu a piva jsou uvedeny suroviny potřebné k výrobě, a to voda, sladovnický ječmen, chmel a pivovarské kvasinky. Popsán je technologický postup vedoucí k hotovému pivu. Další kapitola charakterizuje nejvýznamnější látky obsažené v pivu. Zmíněn je vliv polyfenolů na antioxidační stabilitu piva. Na závěr teoretické části práce jsou popsány úpravy piva před samotnou analýzou, jednotlivá analytická stanovení uvedených parametrů a sledovaných látek. Praktická část je zaměřena především na stanovení K+, NH4+ a PO43- iontů. V praktické části je popsána také příprava používaných roztoků, elektrolytů a výsledky měření provedených kapilární izotachoforézou s vodivostní detekcí.

Abstract:

The aim of the theoretical part of this bachelor thesis was to develop a literature review that outlines the technological process of a beer production, chemical composition and chemical analysis of the finished beer. In the introduction of the thesis are discussed health effects of the beer on human health. The chapter of malt and beer production refers to raw materials which are needed for its production such as water, malting barley, hops and brewer's yeast. The whole technological process leading to the finished beer is explained. The next chapter describes the most important substances in the beer. There is mentioned the effect of polyphenols on antioxidant stability of the beer. At the end of this theoretical part of the work are described modifications of the beer prior to the analysis, each analytical determination of these parameters and substances. The practical part of this thesis is mainly focused on the determination of K+, NH4+ and PO43- ions. There is also described the whole preparation of used solutions, electrolytes, and the results of measurements made by capillary isotachophoresis with conductivity detection.
