Práce se zabývá stanovením antioxidační aktivity Yerba maté (Ilex paraguariensis) v závislosti na době skladování při různé vlhkosti prostředí. Byly sledovány vybrané antioxidační charakteristiky a obsah některých látek ve vzorcích s využitím spektrofotometrie a vysoce účinné kapalinové chromatografie. This work is focused on determination of the antioxidant capacity of Yerba maté (Ilex paraguariensis) during storage at various relative humidity. Atioxidant characteristics and the content of antioxidant compounds were determinated by the spectrophotometric and HPLC methods in samples.
