The most offered food attachments in Czech restaurants and their nutritional value

Abstract:

Cílem této práce je provést průzkum ve vybraných českých restauracích a zjistit, jaké přílohy jsou nejčastěji nabízené. Při dosahování tohoto cíle je možné také posoudit, zda vybrané české restaurace preferují nabídku příloh s ohledem na zdravou výživu. V teoretické části je využito deskripce k popsání nabízených příloh. Zároveň je použita také metoda rešerše. Je provedena analýza nabízených příloh napříč restauracemi v České republice a u zjištěných příloh je využita metoda komparace pro jejich srovnání. Nakonec je provedena syntéza jednotlivých zjištění, na základě kterých je navrženo řešení ke zlepšení zjištěného stavu. Z odpovědí na výzkumné otázky vyplynulo, že nejvíce nabízenými přílohami v českých restauracích jsou vařené brambory, bramborové hranolky, šťouchané brambory a grilovaná zelenina. Závažným zjištěním, které z průzkumu vyplynulo je, že restaurace nabídkou příloh nepreferují zdravou výživu. V návrhové části byly navrženy alternativy přípravy bramborových hranolek jako absolutně nejčastější přílohy. Byly navrženy konkrétní možnosti, jak z hranolek vytvořit zdravější přílohu. Dále byly navrženy přílohy jako jsou čočka, hrách, cizrna, bulgur, quinoa nebo kuskus, které by mohly být zařazeny do jídelních lístků restaurací tak, aby restaurace nabízely více příloh, které splňují podmínky zdravé výživy. Předpokládaným přínosem práce jsou konkrétní doporučení pro zlepšení aktuálního stavu nabízených příloh, která mohou restaurace využít.

Abstract:

The aim of this work is to do a survey in selected Czech restaurants and find out what supplements are most often offered. In achieving this goal, it is also possible to assess whether selected Czech restaurants prefer to offer side dishes with regard to healthy nutrition. The description is used n the theoretical part to describe the offered attachments. The research method is also used. The analysis of offered supplements across restaurants in the Czech Republic is made and the found supplements are used for comparison. Finally is made the synthesis of individual findings, on the basis of which is proposed a solution to improve the detected state. The answer to the research questions showed that the most offered side dishes in Czech restaurants are boiled potatoes, French fries, mashed potatoes and grilled vegetables. A serious finding that came out of the survey is that restaurants do not prefer healthy nutrition by offering side dishes. In the practical part were proposed alternatives of preparation of French fries as absolutely the most common attachment. Specific options were proposed to make fries as a healthier attachment. In addition, attachments such as lentils, peas, chickpeas, bulgur, quinoa or couscous were proposed that could be included to the menus of restaurants so that restaurants offer more attachment that meet the conditions of a healthy nutrition. The expected benefits of the work are specific recommendations for improving the current status of the offered attachments, that can be used by restaurants.
