Economic evaluation of the wine production process in a winery

Abstract:

Bakalářská práce se zabývá zpracováním nákladů na výrobu vína v podmínkách malé vinařské společnosti s produkcí 8 000 l vína ročně. V literární části je popsána technologie výroby vína a její jednotlivé procesy. Ve vypracování je popsán modelový podnik, výběr využitého technologického zařízení na výrobu vína a vybavení modelového podniku. Dále je vypracována kalkulace nákladů na využití jednotlivých zařízení a celkových nákladů. Náklady na výrobu sudového vína jsou kalkulovány 39,91 Kč.l-1 u bílého a 45,18 Kč.l-1 u červeného. Jsou doplněny také náklady na lahvování. Analýzou celkových nákladů bylo zjištěno, že nejnákladnější položku na výrobu vína obecně tvoří vstupní surovina, kterou jsou hrozny moštových odrůd. Další důležitou nákladovou položku výroby bílého vína tvoří náklady na mzdu pracovníka. Ekonomicky nákladné je v případě výroby červeného vína použití vinifikátoru.

Abstract:

The bachelor‘s thesis deals with the processing of wine production costs in the conditions of small winemaking company with the production of 8 000 liters of wine per year. The technology of wine production and its individual processes is described in the literature part. In the elaboration part there are following items described: a model company, selected technological equipment for the wine production and the equipment of the model company. In the subsequent parts, there are both the calculation of costs for using individual equipment and the total costs. The costs for the production of cask wine are calculated at CZK 39.91 for one liter of white wine and CZK 45.18 for one liter of red wine. Bottling costs are also stated. The cost analysis of the wine production showed that the most important component of the wine production is the entering raw material - grapes of the grape wine variety. Another important item of the white wine production is the cost of the employee's wages. In red wine production it is economically expensive to use a vinifier.
