Tato diplomová práce se zabývá problematikou vlivu aditiv na reologické vlastnosti ovocných a zeleninových pyré. V teoretické části jsou popsány jednotlivé druhy aditivních látek, jejich použití v potravinářství a vliv na reologii potravin. This diploma thesis deals with the influence of additives on the rheological properties of fruit and vegetable purees. In the theoretical part are described individual types of additives, their use in food industry and influence on food rheology.
