Abstract:

Diplomová práce na téma „Komparace nabídky a kvality poskytovaných služeb kaváren na území městské části Praha – Modřany“ se zaměřuje na čtyři kavárny v oblasti Praha-Modřany, které si konkurují nejen místem, ale i nabídkou a službami. Cílem diplomové práce je porovnat poskytované služby a zjistit jejich rozsah a úroveň ve vybraných kavárnách na území městské části Praha – Modřany s využitím výzkumných metod mystery shoppingu a benchmarkingu. Teoretická část práce se zabývá definováním základních pojmů, jejichž znalost je podmínečně nutná pro porozumění dané problematice. Pro zpracování analytické části práce jsou využity dvě výzkumné metody, kterými jsou mystery shopping a benchmarking. Mystery shopping je prováděn ve čtyřech konkurenčních kavárnách třemi na sobě nezávislými hodnotiteli, z důvodu zachování objektivnosti. Na základě výsledků mystery shoppingu je vyhodnocena nejúspěšnější provozovna, která dosahuje nejlepších výsledků ve všech hodnocených oblastech. Následně je pro tuto provozovnu proveden benchmarking. Pro jeho účely byl autorkou práce subjektivně vybrán nejúspěšnější konkurent této kavárny. Z výsledků výzkumu vychází jako nejkritičtější oblast všech provozoven oblast obsluhy a servisu. Návrhová část práce se zaměřuje na stanovení návrhových řešení pro eliminaci či úplné odstranění kritických oblastí daných provozoven.

Abstract:

The diploma thesis on "Comparison of the Offer and Quality of the Coffee House Servises in Prague Quarter Modřany“ focuses on four cafes in the Prague-Modřany area, which compete not only with the place, but also with the offer and services. The aim of the diploma thesis is to compare the services provided and find out their scope and level in selected cafes in Prague Quarter Modřany using research methods of mystery shopping and benchmarking. The theoretical part of the thesis deals with the definition of basic concepts, the knowledge of which is conditionally necessary for understanding the issue. Two research methods are used to process the analytical part of the work, which are mystery shopping and benchmarking. Mystery shopping is done in four competing cafes by three independent evaluators, in order to maintain objectivity. Based on the results of mystery shopping, the most successful establishment which achieves the best results in all evaluated areas is evaluated. Subsequently, benchmarking is performed for this establishment. For its purposes, the author of the work subjectively selected the most successful competitor of this cafe. The results of the research show that the most critical area of all establishments is area of services. The draft part of the thesis focuses on determining draft solutions for the elimination or complete removal of critical areas of the premises.
