The use of protective cultures in the production of dairy products
Abstract:
Bakalářská práce se zabývá mikroflórou mléka, popisuje mikroorganismy způsobující kažení mléčných výrobků. Další část charakterizuje mikroorganismy v čistých mlékařských kulturách. Dále popisuje použití ochranných kultur v mléčných výrobcích. Poslední část je zaměřena na ochranné kultury na českém trhu.
Abstract:
This bachelor thesis deals with microbiology of milk, describes microorganisms,which can cause spoiling of dairy products. Next part characterizes microorganisms in starter cultures. As well as describes the use of protective cultures in the production of dairy products. In the last part is aimed at protective cultures in the Czech market.
