Analysis of business model of sustainable cafe

Abstract:

Hlavním cílem bakalářské práce je popsat podnikatelský záměr udržitelné kavárny, navrhnout její business model a následně analyzovat jednotlivé body. Práce je rozdělena do dvou částí, teoretickou a praktickou. Teoretická část je věnována definování pojmů business model, Lean Canvas, udržitelný rozvoj a zero waste. Teoretická část je zpracována na základě odborné literatury. Praktická část je zaměřena na představení podnikatelského záměru udržitelné kavárny, sestavení jejího business modelu a pomocí šablony Lean Canvas znázornění a popis devíti stavebních prvků business modelu. Součástí praktické části je také výzkum zákaznických segmentů a zkoumání možnosti rozvoje Café Sommar. Výsledky výzkumu ukázaly stoupající zájem lidí o téma udržitelného rozvoje, jejich snahu o ochranu životního prostředí a podporu malých podniků, které se tomu denně věnují. Tento výzkum byl podkladem při určování cen v kavárně a při stanovení její nabídky. Sestaveny v rámci této práci business model udržitelné kavárny lze považovat za úspěšný business model, jelikož při jeho realizaci lze dosáhnout kladného hospodářského výsledku. V budoucnosti bude tento model bude využít jako osnova k sestavení podnikatelského plánu.

Abstract:

The main aim of this bachelor thesis is to describe the business plan of a sustainable cafe, to design its business model and then to analyze the individual points. The thesis is divided into two parts, theoretical and practical. The theoretical part is devoted to defining the terms as business model, Lean Canvas, sustainable development and zero waste. The theoretical part is mainly based on literature. The practical part is focused on the presentation of the business intention of a sustainable café, its business model and with using Lean Canvas to show the individual points. The one section of the practical parts is devoted to the research of customer segments, as well as exploring the possibilities of development. The results of the research have shown the increasing interest of people in the topic of sustainable development, their efforts to protect the environment and the support a small sustainable companies. At the same time, this research was the base for setting prices in the cafe. This business model of a sustainable cafe can be considered as a successful business model, because positive economic results can be achieved in its implementation. In the future, this business model will be used as a foundation for building a business plan.
