Desserts and Cakes in the Territory of the Today's Czech Republic in the Context of Historical Development

Abstract:

Bakalářská práce má tři hlavní části: teoretická, analytická a návrhová. Cílem v teoretické části je zmapovat historii sladkých dezertů a zákusků od 17. století až do současnosti na území dnešní České republiky. Také zpřesnit vývoj stravy a v každém období popsat významné osobnosti. Jsou uvedeny suroviny, které se používaly v daném století a také konkrétní sladká jídla a dezerty. Analytická část znázorňuje situační analýzu 10 cukráren v pardubickém kraji v České republice a dotazníkové šetření s jedenácti otázkami mířenými na vedení cukráren. Hlavním cílem bakalářské práce je zjistit, jak jsou na tom české cukrárny, zda je poptávka po českých dezertech a zákuscích. Dalším úkolem je zjistit, zda se zaměřují spíše na tradiční české zákusky a dezerty, nebo je nahrazují moderními. Návrhová část poskytuje řešení pro zkoumané podniky, které by mohlo být nápomocné pro vyšší návštěvnost. Popisuje všech deset cukráren spolu s jejich odpověďmi, které zodpověděli v dotazníku a při osobním setkání přímo v cukrárnách. Závěr shrnuje bakalářkou práci od první časti, a to teoretické až po poslední kterou je část návrhová. V této části jsou popsány i subjektivní dojmy autora.

Abstract:

The bachelor thesis has three main parts: theoretical, analytical and design. The aim in the theoretical part is to map the history of sweet Desserts and Desserts drom the 17th century to the present in the Territory of today’s Czech Republic. Also refine the development of the diet and in each period describe important personalities. The ingredients that have been used in a given century are listed, as well as specific sweet foods and Desserts. The analytical part shows a situation analysis of 10 confectioneries in the Pardubice region in the Czech Republic and a questionnaire survey with eleven questions aimed at the management of confectioneries. The main goal of the bachelor´s thesis is to find out how Czech confectioneries aredoing, whether there is a demand for Czech desserts and desserts. Another task is to find out whether they focus more on traditional Czech desserts and desserts, or replace them with modern ones. The design part is processed from the results of the analytical part and sets out a proposal for improving the situation. The output of the bachelor´s thesis is to draw a conclusion that could help individual companies to even greater stability in the market and more visitors. The conclusion summarizes the whole work, evaluates the selected hypotheses, the contribution to practise and the overall impression of the author.
