Abstract:

Bakalářská práce se zabývá specifikou institucionálního stravování ve dvou nemocnicích, z nichž jedna se nachází v České republice a nazývá se Thomayerova nemocnice. Druhá nemocnice je na Ukrajině, jmenuje se Regionální klinická nemocnice M. I. Pirogova. Cílem práce je zkoumání systému stravování ve zvolených institucích a porovnání je mezi sebou.Bylo provedeno dotazníkového šetření pacientů a pracovníků stravovacích úseků pro zjištění spokojenosti pacientů a znalostí pracovníků o kvalitním vedení stravovacího provozu. Další podklady byly získané pomoci strukturovaných rozhovorů s nutričními terapeuty. V návrhové části jsou uvedené nedostatky nalezené během zkoumání v analytické části a následné návrhy a doporučení jak ke způsobu organizace stravování, tak i k jeho věcné náplni.

Abstract:

The bachelor thesis deals with the specifics of institutional nutrition in two hospitals, one of which is located in the Czech Republic and is called Thomayerov hospital. The second hospital is in Ukraine, named regional clinical hospital of M.I Pirogov. The aim of the work is researching of nutrition system in selected institutions and comparing them between each other. It was made a questionnaire survey of patients and staff of catering sections to determine patient satisfaction and knowledge workers of a quality leading of catering service. Others materials were bound by structured interviews with nutritional therapists. In proposal part are indicated disadvantages which were founded during researching in analytical sections and subsequent proposals and recommendations as to organization way of nutrition as well as to its material content.
