Bacteriocin-producing capacity of the bacteria isolated from foods

Abstract:

Bakteriociny jsou definovány jako peptidy nebo proteiny, které bývají syntetizovány v ribozomech různých kmenů bakterií, a které mohou vykazovat schopnost inhibice růstu jiných mikroorganismů. V teoretické části této bakalářské práce je popsána charakterizace a dělení bakteriocinů produkovaných grampozitivními bakteriemi, jejich mechanismus vzniku a účinku, využití bakteriocinů a metody stanovení produkce bakteriocinů. V praktické části této práce je popsána izolace grampozitivních bakterií z vybraných potravin, provedení jejich předběžné typizace a identifikace, a ověření schopnosti produkce antimikrobních látek - bakteriocinů.

Abstract:

Bacteriocins are defined as peptides or proteins that tend to be synthesized in the ribosomes of various strains of bacteria, which may show the ability to inhibit the growth of other microorganisms. The theoretical part of this bachelor's thesis describes the characterization and the division of bacteriocins produced by gram-positive bacteria, their mechanism of formation and action, the use of bacteriocins and methods for determining the production of bacteriocins. The practical part of this thesis describes the isolation of gram-positive bacteria from selected food, their preliminary typing and identification, and the ability to produce antimicrobial substances - bacteriocins.
