Consumption of Red Meat in Relation to Cancer Risk

Abstract:

Červené maso a masné výrobky jsou běžnou součástí moderního stravování, nicméně v roce 2015 byly Mezinárodní agenturou pro výzkum rakoviny označeny jako pravděpodobně karcinogenní pro člověka a jako humánní karcinogen. Cílem bakalářské práce s názvem „Konzumace červeného masa ve vztahu k riziku rakoviny“ je posouzení dostupných vědeckých studií a systematická revize relevantní literatury, které se zabývají vztahem mezi konzumací červeného masa a zpracovaného masa a výskytem nádorového onemocnění. Detailněji se práce zabývá především jednotlivými karcinogeny. Práce si klade za cíl zhodnotit rizika a formulovat doporučení, která mohou pomoci při výběru vhodných potravin a při úpravě životního stylu jako prostředku pro prevenci rakoviny.

Abstract:

Red meat and meat products are a common part of the modern diet, but in 2015 they were identified by the International Agency for Research on Cancer as probably carcinogenic to humans and carcinogenic to humans. The aim of this bachelor thesis, entitled "Consumption of Red Meat in Relation to Cancer Risk", is to assess the available scientific studies and systematically review the relevant literature that address the relationship between red meat and processed meat consumption and cancer incidence. In particular, the thesis looks in detail at individual carcinogens. As a result of the work, the risks are evaluated, and recommendations are formulated to assist in food choices and lifestyle modifications as a means of cancer prevention.
