Abstract:

Tato bakalářská práce se zabývá různými aspekty konzumace microgreens. Teoretická část zahrnuje kapitoly o nejnovějších poznatcích týkajících se pěstování, hygienických rizik, druhů, nutričního složení a benefitů konzumace microgreens pro lidské zdraví. Praktická část řeší pomocí kvalitativního výzkumu využití microgreens do receptur pro strávníky různých věkových skupin ve školních jídelnách a pacienty ve zdravotnických zařízeních. Cílem práce je definovat zdravotní benefity a případná rizika konzumace pokrmů s microgreens, vytvořit jídelníček zahrnující pokrmy s microgreens a zhodnotit jejich nutriční složení. Práce obsahuje dva vzorové jídelníčky na pět dní. První jídelníček odpovídá dietě 3FIT (pro pacienta ve zdravotnickém zařízení), druhý vychází z potřeb dítěte mladšího školního věku. V každém jídelníčku jsou denně zahrnuty dva různé pokrmy s microgreens, a to jak slané, tak sladké. Vybraných šest pokrmů s šesti různými druhy microgreens bylo navíc připraveno. Receptury těchto pokrmů byly navrženy předem, nicméně konečnou podobu získaly teprve právě po jejich odzkoušení. Jídelníčky byly propočítány v nutričním softwaru DietSystem, do nějž proto byly nově implementovány údaje o nutričním složení microgreens. Za účelem hodnocení nutričního složení pokrmů s microgreens byl zjišťován obsah vybraných živin na jednu porci microgreens. Na tato zjištění navazuje definování zdravotních benefitů konzumace microgreens, která se částečně opírají také o poznatky z teoretické části práce, stejně jako definování možných rizik. Použitými metodami výzkumu se podařilo splnit všechny stanovené cíle. Navržené jídelníčky s microgreens splňují energetickou i biologickou potřebu modelových osob. Podařilo se připravit vybraných šest pokrmů s microgreens, jejichž receptury byly díky tomu optimalizovány. Součástí práce jsou také fotografie pokrmů. Propočet nutričního složení jídelníčků umožnil porovnat obsah vybraných živin v jedné porci microgreens u vybraných šesti pokrmů s doporučenými denními dávkami (DDD) stanovenými Evropským úřadem pro bezpečnost potravin (EFSA). Z výsledků vyplývá, že již díky jedné porci microgreens jsou z velké části či zcela pokryty denní nároky těchto osob na vitaminu C a vitaminu E. Byla nalezena spousta benefitů konzumace pokrmů s microgreens, od zmíněných nutričních výhod, přes široké možnosti technologického zpracování, hypoalergenní složení microgreens, zbytnost použití hnojiv a pesticidů, krátkou dobu pěstování, nízké nároky na půdu, či zlepšení senzorického vnímání výsledných pokrmů a další. Navíc bylo zjištěno, že je dle platné legislativy možné pěstovat například přímo v rámci prostor školského zařízení. S konzumací microgreens se naopak pojí také zvýšené riziko kontaminace mikroorganismy, a proto je nutné lépe prozkoumat a nastavit konkrétní opatření. Tato práce může sloužit jako příručka pro získání důležitých znalostí o microgreens (informace samozřejmě nejsou vyčerpávající). Jídelníček s příkladem receptur může poskytnout inspiraci pro plánování stravy s microgreens do praxe, a to nejen ve zdravotnických a školských zařízeních. Jako přínos práce lze považovat i rozšíření jednoho z nutričních softwarů o nové potraviny, nabývající na oblíbenosti veřejností. Díky tomu lze jednodušeji získat přehled o nutričním složení dalších pokrmů s microgreens.

Abstract:

This bachelor´s thesis deals with various aspects of the consumption of microgreens. The theoretical part includes chapters on the latest knowledge regarding cultivation, hygiene risks, species, nutritional composition, and the benefits of consuming microgreens for human health. The practical part solves, using qualitative research, the use of microgreens in recipes for diners of different age groups in school canteens and for patients in healthcare facilities. The aim of the thesis is to define the health benefits and potential risks of consuming foods with microgreens, to create a meal plan including dishes with microgreens and to evaluate their nutritional composition. The thesis contains two exemplary meal plans for five days. The first meals plan corresponds to the diet 3FIT (for a patient in a healthcare facility), the second one is based on the needs of a child of younger school age. Each meal plan includes two different dishes with microgreens in every day, both savoury and sweet. In addition, the selected six dishes with six different types of microgreens were prepared. The recipes for these dishes were designed in advance, nevertheless they took their final form only after they were tried out. The meal plans were calculated in the nutritional software DietSystem, into which the data about the nutritional composition of microgreens were newly implemented. In order to evaluate the nutritional composition of dishes with microgreens, the content of selected nutrients per serving of microgreens was determined. These findings are followed by a definition of the benefits of consuming microgreens, which is partly also based on findings from the theoretical part of the thesis, as well as the defining of possible risks. With the research methods used, it was possible to fulfil all the set goals. The designed meal plans with microgreens meet the energy and biological needs of model persons. It was possible to prepare six selected dishes with microgreens, the recipes of which were optimized as a result. The thesis also includes photographs of the dishes. The calculation of the nutritional composition of the meal plans made it possible to compare the content of selected nutrients in one portion of microgreens for selected six foods with dietary reference values (DRVs) established by the European Food Safety Authority (EFSA). The results show that already in one portion of microgreens, the daily requirements of these people for vitamin C and vitamin E are largely or completely covered. Many benefits of eating food with microgreens were found from the nutritional benefits mentioned, through the wide possibilities of technological processing, hypoallergenic composition of microgreens, uselessness of fertilizers and pesticides, short cultivation time, low requirements for soil, or improvement of the sensory perception of the resulting dishes and others. In addition, it was found that, according to the applicable legislation, it is possible to grow, for example, directly within the premises of a school facility. On the other hand, consumption of microgreens is also associated with an increased risk of contamination by microorganisms, which is why it is necessary to better investigate and set specific precaution. This thesis can serve as a guide for obtaining important knowledge about microgreens (the information is not exhaustive of course). The meal plan with example recipes can provide inspiration for planning a diet with microgreens in practice, not only in healthcare and school facilities. The extension of one of the nutritional software to include new foods, which are gaining popularity among the public, can also be considered as a benefit of the thesis. Thanks to this, it is easier to get an overview of the nutritional composition of other dishes with microgreens.
