Fish in Czech School Catering

Abstract:

Tato diplomová práce se zabývá rolí ryby v českém školním stravování. Hlavním cílem je identifikovat nabídku a poptávku po rybích pokrmech v českých školních stravovacích zařízeních. Dalším cílem je identifikovat využití sladkovodních i mořských ryb v českých školních stravovacích zařízeních. Teoretická část se zabývá rybníkářstvím v České republice, vybranými druhy ryb, zdraví prospěšnými účinky ryb a také českým školním stravováním. Analytická část se věnuje kvantitativnímu a kvalitativnímu výzkumu. Kvantitativní výzkum je rozdělen na dvě části. První část zkoumala nabídku rybích pokrmů a využití sladkovodních i mořských ryb v českých školních stravovacích zařízeních pomocí elektronického dotazníku, který byl určen pro vedoucí pracovníky těchto zařízení. Druhá část zkoumala poptávku po rybích pokrmech v českých školních stravovacích zařízeních pomocí elektronického dotazníku, který byl určen pro žáky ze základních škol. Obě části výzkumu se zaměřovaly na aspekty, jako jsou například nabízené a poptávané druhy ryb a druhy rybích pokrmů, nabízené a poptávané druhy příloh připravovaných k rybím pokrmům, četnost nabídky a poptávky rybích pokrmů v rámci jednoho měsíce, oblíbenost ryb a další aspekty. Kvalitativní výzkum zkoumal poptávku po rybích pokrmech v českých školních stravovacích zařízeních pomocí rozhovorů v terénu s žáky z jedné základní školy. Sledované aspekty byly podobné jako u druhé části kvantitativního výzkumu. Na základě získaných výsledků jsou v návrhové části uvedeny konkrétní návrhy a doporučení, jejichž cíli je popularizovat konzumaci ryb mezi dětmi, budovat jejich pozitivní vztah ke konzumaci ryb a zvyšovat jejich povědomí o zdraví prospěšných účincích ryb.

Abstract:

This Master’s Dissertation deals with the role of fish in Czech school catering. The main goal is to identify the supply and demand of fish dishes in Czech school catering facilities. Another goal is to identify the use of freshwater and saltwater fish in Czech school catering facilities. The theoretical part deals with pond farming in the Czech Republic, selected fish species, health benefits of fish and also Czech school catering. The analytical part is devoted to quantitative nad qualitative research. Quantitative research is devided into two parts. The first part examined the supply of fish dishes and the use of freshwater and saltwater fish in Czech school catering facilities using an electronic questionnaire, which was designed for leaders of these facilities. The second part examined the demand of fish dishes in Czech school catering facilities using an electronic questionnaire, which was designed for primary school students. Both parts of the research focused on aspects such as offered and demanded fish species and fish dishes, offered and demanded side dishes prepared for fish dishes, frequency of supply and demand of fish dishes within one month, fish popularity and other aspects. Qualitative research examined the demand of fish dishes in Czech school catering facilities through interviews with students from one primary school. The observed aspects were similar as the observed aspects of the second part of the quantitative research. Based on the obtained results, the proposal part contains specific proposals and recommendations, the aim of which is to popularize the consumption of fish among children, build their positive attitude towards the consumption of fish and increase their knowledge of the health benefits of fish.
