Catering versus operation ala carte

Abstract:

Hlavním cílem této bakalářské práce bylo navrhnout všeobecné možnosti optimalizace provozu ala carte a cateringu při pořádání společensko-gastronomických eventů s ohledem na preference potenciálních klientů. Druhým hlavním cílem bakalářské práce bylo formulovat doporučení pro začínající podnikatele v gastronomickém průmyslu. Dílčím cílem této bakalářské práce bylo identifikovat výhody a nevýhody provozu à la carte a cateringu a vymezit hlavní odlišnosti u obou provozů. Dílčí cíle byly využity jako podklady k realizaci návrhu. V oblasti metodiky jsou v práci využity metody deskripce, analýzy, komparace a dedukce. V teoretické části je především využita metoda deskripce, která je založena na literární rešerši odborných publikací. V analytické části práce je využita převážně metoda primární analýzy v podobě polostrukturovaného rozhovoru a dotazníkového šetření. Při vyhodnocení analýz je aplikována komparace a dedukce. Celá práce je převážně deskriptivního charakteru.

Abstract:

The main objective of this bachelor´s dissertation was to propose the general options of operation ala carte and catering in organising the socio-gastronomic events with regard to the preferences of potential clients. The second main objective of bachelor´s dissertation was to formulate the recommendations for new entrepreneurs in the gastronomic industry. The partial objective of this bachelor´s dissertation was to identify the advantages and disadvantages of ala carte and catering and to identify it´s differences. The partial objectives were used as a base for implementation of the proposals. According to methodology there are used in the dissertation methods of description, analysis, comparison and deduction. In the theoretical part there is mostly used a method of description based on bibliography research of scientific publications. In the analytical part there is mostly used a method of primary analysis based on a half-structured interview and questionnaire survey. In the term of the evaluation of analysis there is used a method of comparison and a method of deduction. The whole dissertation is written in descriptive character.
