Abstract:

Tato diplomová práce má za cíl identifikovat využití sladkovodních i mořských ryb v českých gastronomických zařízeních. V práci jsou zahrnuty identifikace vlastností nabídky i poptávky po rybích pokrmech v českých gastronomických zařízeních. Ryba v české gastronomii patří mezi tradiční pokrmy a je tedy žádoucí hájit její postavení v nabídkách gastronomických provozoven. Klíčová část práce je rozdělena do dvou částí – nabídky a poptávky. Tyto části mají za cíl identifikaci vlastností nabídky a poptávky v oblasti rybí gastronomie. Nabídka je v rámci této práce identifikována formou kvantitativního průzkumu nabídek vybraných zařízení formou průzkumu a následné komparace jídelních lístků daných restauračních provozoven s cílem vytyčení druhového zastoupení ryb, průměrných cen jednotlivých druhů ryb v jídelních lístcích a technologie jejich příprav. Dále byla tato část rozšířena kvalitativním výzkumem provedeným formou uskutečnění strukturovaných rozhovorů s manažerskými pracovníky těchto provozoven, které byly následně zpracovány metodou selektivní transkripce a byla provedena analýza sekundárních dat získaných ze zmíněních rozhovorů. Tento průzkum se zaměřoval na praktické poznatky manažerských pracovníků daných restaurací, které práci doplňují o jejich zkušenosti v oboru. Problematika poptávky po rybích pokrmech je řešena formou dotazníkového šetření a následně zhodnocena v grafickém zobrazení. Cílem tohoto šetření je identifikace potřeb a požadavků respondentů z pohledu konzumenta rybí gastronomie. Na základě zjištěných informací byly následně vytvořeny návrhy a doporučení, které mají sloužit jako náměty k pozitivním změnám postavení rybích restaurací a samotných rybích pokrmů ve společnosti.

Abstract:

This diploma thesis aims to identify the use of freshwater and marine fish in Czech gastronomic facilities. The thesis includes the identification of the properties of supply and demand of fish dishes in Czech gastronomic establishments. Fish in Czech gastronomy is one of the traditional dishes and it is therefore desirable to defend its position in the menus of gastronomic establishments. The key part of this thesis is divided into two parts - supply and demand. These parts aim to identify the characteristics of supply and demand in the field of fish gastronomy. The offer is identified in the form of a quantitative survey of selected facilities in the form of a survey and subsequent comparison of menus of restaurants in order to determine the species representation of fish, average prices of individual fish species in menus and technology of their preparation. Furthermore, this part was expanded by qualitative research conducted in the form of structured interviews with managers of these establishments, which were subsequently processed by the method of selective transcription and analysis of secondary data obtained from the interviews. This survey was focused on the practical knowledge of the managers of the restaurants, complemented with their experience in the field. The issue of demand for fish dishes is addressed in the form of a questionnaire survey and then evaluated in a graphical representation. The aim of this survey is to identify the needs and requirements of respondents from the perspective of a fish gastronomy consumer. Based on the obtained information, proposals and recommendations were subsequently created to serve as suggestions for positive changes in the positioning of fish restaurants and the fish dishes themselves in society.
