The Microflora of Wine During Production
Abstract:
Bakalářská práce se zabývá výskytem mikroorganismů v průběhu výroby vína. Teoretická část je zaměřena především na mikroflóru bobulí hroznu, moštu a vína. Dále je popsána stavba hroznu, bobule a výroba vína. V praktické části jsou popsány metody, které byly použity při mikrobiologickém rozboru bobulí hroznu, moštu a vína. Získané výsledky byly zpracovány do tabulek a grafů.
Abstract:
Bachelor thesis deals the occurrence of micro-organisms during the wine production. The theoretical part is mainly focused on the microflora of berries grape, grapes juice and wine. Further described is structure of grapes and berries and wine production. In the practical part is described the methods that were used in microbiological analysis of grape berries, grapes juice and wine. The obtained results …more
