Předmětem této práce bylo sledovat obsah biogenních aminů ve fermentovaných masných výrobcích a v závislosti na jejich změnách během chladírenského skladování při 6 °C. Obsah biogenních aminů byl monitorován bezprostředně po zakoupení a na konci doby skladování. Abstract:
The objective of this work was to monitor the content of biogenic amines in fermented meat products and to monitor their changes during storage at 6 °C. The content of biogenic amines was noted after the purchase and at the end of the shelf life. All samples were prepared by derivatization with dansylchloride and analyzed by high performance liquid chromatography. Tyramine was detected in most samples …more
