Health and Nutritional Aspects of Dried Fruit

Anotácia:

Bakalářská práce se zabývá problematikou sušeného ovoce. V úvodu teoretické části práce jsou stručně vymezeny základní pojmy a definice, které se celou prací prolínají a které jsou nezbytné pro pochopení dané problematiky. Zejména se jedná o charakteristiku ovoce, vymezení pojmu sušeného ovoce a požadavky na jeho jakost. Následující kapitoly teoretické části jsou věnovány doporučením ohledně nákupu a skladování sušeného ovoce v domácnosti, spotřebě sušeného ovoce, základním metodám konzervace ovoce, složení sušeného ovoce a příznivým účinkům sušeného ovoce na lidské zdraví. Závěr teoretické části je věnován rizikům spojených s konzumací sušeného ovoce. Praktická část zahrnuje dotazníkové šetření, které se zaměřuje na spotřebu, oblíbenost a znalost sušeného ovoce u studentů vysokých škol v Brně.

Abstract:

The bachelor thesis deals with dried fruit and consists of theoretical and practical part. At the beginning of the theoretical part of the thesis there are briefly defined the basic terms and definitions, which are intermingled throughout the work and which are necessary for understanding of the given issue, especially when it comes to the characteristics of fruit, the definition of the concept of dried fruit and requirements for its quality. The following chapters of the theoretical part concern recommendations on the purchase and storage of dried fruit in the household, consumption of dried fruit, the basic methods of fruit preservation, the composition of dried fruit and the beneficial effects of dried fruits on human health. Conclusion of the theoretical part deals with the risks associated with consumption of dried fruit. The practical part includes a questionnaire survey, which focuses on consumption, popularity and knowledge of dried fruit among university students in Brno.
