Fish in czech gastronomy

Abstract:

Diplomová práce se zabývá postavením ryby v současné české gastronomii, odkazem na tradici související s rybí gastronomií a rybářstvím s kořeny v dávné historii dnešního území České republiky. Cílem práce je identifikace tradičních rybích pokrmů a jejich zasazení do kulturních, historických a přírodních podmínek. Dále objasnit současnou situaci v oblasti rybí gastronomie v České republice a vynést návrhy pro její zlepšení. Teoreticko-metodologická část je věnována vývoji gastronomie a rybníkářství v České republice, která je dále rozdělena na devět jádrových oblastí kulturní tradice v rybářství. Je uveden výčet tradičních českých sladkovodních ryb dle Magdalény Dobromily Rettigové a nastíněna historická souvislost při úpravě jednotlivých druhů sladkovodních ryb. Analytická část je rozdělena na dvě části – kvantitativní a kvalitativní zpracování dat. Obě metody mají za úkol vyhodnotit současnou situaci rybí gastronomie ve vazbě na tradici a historický vývoj. Kvalitativní výzkum aktérů probíhal formou terénního šetření v jižních Čechách prostřednictvím semi-strukturovaného formuláře. Jádrem rozhovoru bylo získání kvalifikovaných informací a odborných stanovisek aktérů, kteří se podílí významnou měrou na rozvoji rybářské kultury, nebo jsou alespoň pasivní součástí procesu obnovy kulturních tradic spojených s rybářstvím. Kvantitativní průzkum hodnotí zasazení nabídky vybraných restaurací do kulturních, historických a přírodních podmínek území, ve kterém se nacházejí. Shrnuje procentní zastoupení pokrmů ze sladkovodních ryb a poukazuje na úroveň popularity tradičních úprav rybího masa ze strany vybraných restaurací. Na základě toho jsou v návrhové části vynesena doporučení pro zlepšení stávající situace v rybí gastronomii a povědomí o tradici v oblasti rybářství v České republice.

Abstract:

This thesis explores how significant is the position of fish in contemporary Czech gastronomy, referring to the tradition related to fish gastronomy and fishing with roots in the ancient history of what is today the Czech Republic. The aim of the thesis is to identify traditional fish dishes and their setting in cultural, historical and natural conditions. Furthermore, this thesis attempts to clarify the current fish gastronomy situation in the Czech Republic and makes suggestions for its improvement. The theoretical and methodological part focuses on the development of gastronomy and fish farming in the Czech Republic and is then further divided into nine core areas of cultural fishery tradition. Both the list of traditional Czech freshwater fish, which was put together by Magdalena Dobromila Rettigova and the historical context of individual freshwater fish species are included. The analytical part is divided into two parts - quantitative and qualitative data processing. Both methods are designed to evaluate the current situation of fish gastronomy in relation to tradition and its historical development. The qualitative participants' research was conducted as a semi-structured form field survey in South Bohemia. The core of the interview was the acquisition of qualified information and opinions provided by the experts that are significantly involved in the development of fishing culture or at least are a part of the restorative process of the cultural traditions associated with fishing. Quantitative research evaluates the fish offer inclusion in selected restaurants in the cultural, historical and natural conditions of the territory in which they are located. It also summarizes the percentage of freshwater fish dishes and highlights the popularity of traditional fish dishes presented by selected restaurants. Based on the research, the proposal part of the thesis provides suggestions for improving the current situation in fish gastronomy and awareness of the fishing tradition in the Czech Republic.
