Production possibilities and quality of walnut kernel oil

Abstract:

Diplomová práce na téma „Možnosti výroby a jakost oleje z jader vlašských ořechů“ se zabývá technologickým zpracováním olejů a tuků, přičemž je kladen největší důraz na olej z vlašských ořechů. Kvalita oleje závisí zejména na správné technologii lisování a skladování. V teoretické části této práce je popsané zpracování olejnin, vlastnosti tuků a olejů. U vybraných olejnin a tuků jsou charakterizovány jejich obsahové látky. Dále je práce zaměřena na technologii výroby olejů a jejich změny v průběhu skladování. Hlavní část diplomové práce je věnována praktické části, kde jsou popsány jednotlivé analýzy, jako stanovení čísla kyselosti, peroxidového čísla, analýza mastných kyselin, stanovení barvy olejů a senzorické hodnocení oleje. V průběhu skladování může docházet k charakteristickým změnám vlastností oleje. Bylo prokázáno, že olej, který nejméně měnil své vlastnosti v průběhu skladování a byl také nejlépe senzoricky hodnocen, byl vylisován na lisu Farmet (F) a také ten, který byl následně filtrován (FF).

Abstract:

The thesis on "Possibilities for production and quality of walnut kernel oil" deals with the technological processing of oils and fats, with the greatest emphasis on walnut oil. The quality of the oil depends in particular on the right pressing and storage technology. The theoretical part of this work describes the processing of oilseeds, the characteristics of fats and oils. Selected oilseeds and fats are characterised by their content. Furthermore, the work focuses on the technology of producing oils and their changes during storage. The main part of the thesis is devoted to the practical part, where individual analyses, such as determination of acidity number, peroxide number, analysis of fatty acids, measurement of oil colour and sensory evaluation of oil are described. Yoda and Farmet presses were used for pressing the samples and some of them were filtered. Through sensory analysis it was found that the evaluators chose the Farmet (F) pressed and Farmet pressed and filtered (FF) oils as the best. During storage a specific changes in the oil characteristics may occur. It has been proven that the oil that changed its properties the least during storage even depending on the storage time was also pressed on the Farmet press and filtered.
