Abstract:

Práce se zabývá rozšířením existující restaurace UMS Fusion house, která patří pod firmou HL. Food. Podnik byl zapsán do obchodního rejstříku 6.listopadu 2014 jako rodinný byznys za účelem zisku. Vše začalo v mini-marketu, kde se prodávaly potraviny a domácí potřeby. Obchod byl v provozu přes 3 roky, ale rodina si zvolila podnik ukončit a začít s gastronomií. V roce 2018 se tedy rozhodli otevřít novou živnost, a to restauraci U Malého slona, později UMS Fusion house. Restaurace je orientována na asijskou kuchyň, kde je momentálně 1 vlastník, 3 stálí pracovníci a 1 brigádník. Restaurace se nachází v Břevnově na Praze 6. Tato bakalářská práce se zaměřuje především na rozšíření restaurace formou otevření další pobočky. První část práce se zabývá teorií, co všechno v podnikatelském plánu nesmí chybět jako např. základy podnikání, SLEPT a SWOT analýza a Porterův model konkurenčních sil. Další důležitou stránkou je marketing a plány jak operační, tak i finanční. V praktické části se pokusíme aplikovat teoretickou část do praxe. Budeme se zaobírat řešením různých finančních situací, komplikací a možnou nastávající se krizí s otevřením nové pobočky v dané lokaci.

Abstract:

The main subject of this thesis is expanding an existing restaurant UMS Fusion house, which is under company HL. Food. The company was registered 6th November 2014 as a family business for purpose of profit. It all started in a mini-market, where essentials were sold. The store was opened for 3 years, but the family decided to end the business and start with culinary business called U Malého slona, later UMS Fusion house. Restaurant is oriented in asian cuisine, where there is 1 owner, 3 permanent employees and 1 part-time worker. Restaurant is located in Břevnov Prague 6. This thesis is focused in expanding this existing restaurant by opening another branch. First part is about theory, what in a business plan should not be missing for example basic business, SLEPT and SWOT analysis and Porter's analysis. Another important aspect is marketing and plans such as operational and financial. In the practical part we will try to apply the theoretical part into practice. We will deal with the solution of various financial situations, complications and possible upcoming crises with opening a new branch in a given location.
