Tato diplomová práce je zaměřena na stanovení antioxidační aktivity v plodech rakytníku, černého rybízu a šípku. V první části se pojednává o volných radikálech a jejich vlivu na oxidační stres v těle. Také je popsán antioxidační systém a významné antioxidanty. This diploma thesis is focused on the determination of antioxidant activity in the fruits of sea buckthorn, black currant and rosehip. The first part deals with free radicals and their effect on oxidative stress in the body. The antioxidant system and important antioxidants are also described.
