Tato bakalářská práce je zaměřena na vliv působící teploty na mechanické vlastnosti povrchu brambor a na metody, pomocí kterých lze měřit pevnost hlízy bramboru. Popisuje principy a postupy vybraných metod a typů vařičů, které jsou vhodné pro úpravu brambor a jednotlivá měřidla, která měří povrchovou pevnost.
