Inflluences of wine glasses on sensory characteristics of wine

Abstract:

Diplomová práce se zabývá tématem vlivu sklenic na senzorické vlastnosti vína. První část práce řeší historický vývoj nádob určených ke konzumaci vína, konkrétně vzhled a zpracování jejich podoby v průběhu lidských dějin, počínaje Zakavkazskem a Čínou, konče současností. Ve druhé části je probírána současná úloha sklenice v gastronomii a pravidla degustace vína. Třetí část práce se zabývá výzkumem vlivu 12 druhů zvolených nádob ke konzumaci vína na vzhled, vůni a chuť vína. Čtvrtá část práce je věnována vyhodnocení výsledků získaných senzorickou analýzou a dotazníkovým šetřením a také vyhodnocení a verifikaci hypotéz. Poslední pátá část práce zveřejňuje návrhy autora, prvním je návrh čtyř univerzálních sklenic vhodných ke konzumaci všech druhů vín. Druhý návrh upravuje způsob podávání rozlévaných vín.

Abstract:

This thesis topic are influences of wine glasses on sensory characteristics of wine. First part of this study focuses on historic development of glasses used specifically for wine consumption, with attention to their shape and their appearance development, which began in Caucuses region and China, and ends today. The second part of this work discusses contemporary role of wine glasses in gastronomy and rules of wine degustation. Third part of this thesis is comparing influences of 12 different wine glasses based on their look, aroma, and taste of the wine. In the fourth part can be found results of the previous comparison, which were gained by sensory analyses and trough questionnaire, together with hypothesis verification. Last, fifth, part is dedicated to author’s concepts of four universal glasses appropriate for all kinds of wine consumption and to a proposal on changes in methods of wine administration.
