Evaluation of sweeteners in food and their effect on human health

Abstract:

Tato diplomová práce byla vypracována v letech 2021 a 2022 na Ústavu posklizňové technologie zahradnických produktů Zahradnické fakulty Mendelovy univerzity v Brně. Práce pojednává o základním rozdělení a popisu přírodních cukrů a umělých sladidel používaných v potravinářství. Jsou zde zahrnuta významná zdravotní rizika spojená s konzumací sladidel, jejich metabolismus v lidském organismu a vhodnost konzumace jednotlivými populačními skupinami. V neposlední řadě literární přehled pojednává o legislativních nařízeních a omezeních používání umělých sladidel v potravinářské výrobě. V experimentální části byl hodnocen obsah cukrů u 7 vybraných odrůd hrušek, 7 odrůd jablek a 5 odrůd švestek. Analyticky byl také stanoven obsah umělých sladidel acesulfamu-K, aspartamu a sacharinu v 7 vzorcích potravin. Dále byly vyrobeny produkty (kečup, jablečný kompot, jablečné pyré a jablečná šťáva) u kterých bylo provedeno senzorické hodnocení zaměřené na různé způsoby doslazení a zjištění konzumentské přijatelnosti sladké chuti. Senzoricky byly hodnoceny parametry barvy, vůně, konzistence, chutě, intenzity sladké chutě, přijatelnosti sladké chutě a celkového dojmu výrobku.

Abstract:

This diploma thesis was elaborated in 2021 and 2022 at the Department of Postharvest Technology of Horticultural Products of the Faculty of Horticulture, Mendel University in Brno. Diploma thesis deals with the basic division and description of natural sugars and artificial sweeteners used in the food industry. This includes significant health risks associated with the consumption of sweeteners, their metabolism in the human body and the suitability of consumption by individual population groups. Last but not least, the literary review deals with legislative regulations and restrictions on the use of artificial sweeteners in food production. The experimental section evaluated thesugar content of 7 selected pear varieties, 7 apple varieties and 5 plum varieties. The content of artificial sweeteners acesulfame-K, aspartame and saccharin in 7 food samples was also analytically determined. In addition, products (ketchup, apple compote, apple purée and apple juice) were produced for which a sensory evaluation was carried out focusing on various methods of sweetening and establishing the consumer's acceptability of the sweet taste. The parameters of color, aroma, consistency, taste, intensity of sweet taste, acceptability of sweet taste and overall impression of the product were evaluated sensorically.
