Diplomová práce se zabývá studiem potenciálu hydroxyskořicových kyselin pro inhibici malolaktické fermentace u bílých vín. Práce je rozdělena do dvou částí: teoretické a experimentální. Abstract:
This thesis investigates the potential of hydroxycinnamic acids to inhibit malolactic fermentation in white wines. The thesis is divided into two parts: theoretical and experimental. The theoretical part presents a detailed literature review of hydroxycinnamic acids and the lactic acid bacteria responsible for MLF.
