Alternative food in catering

Abstract:

Tato práce je zaměřena na alternativní výživu ve stravování, měla by odkrýt hloubku informací o souvislostech lidského zdraví s výživou. Cílem bakalářské práce bylo zjistit, jak se lidé stravují, jestli jsou ochotni se vzdát potravin, o kterých vědí, že škodí, porovnat jejich stravovací návyky, zjistit rozsah povědomí o alternativní výživě adolescentů a seniorů. V první části jsou vymezeny alternativní směry výživy a jejich charakteristika. Dopodrobna se zabývám vybranými typy alternativního stravování jako je například vegetariánská a veganská strava, dělená strava, nebo raw strava. Druhá část je orientována na různé složky potravin ve výživě a jejich význam pro správné fungování organismu. Zmínila jsem například důležitost vlákniny, vitamínů nebo minerálních látek. Analytická část se zaměřuje na vžité omyly ve výživě. Dále zde nalezneme vyhodnocení dotazníku, který byl fyzicky rozdán jak adolescentům, tak i seniorům. V této části práce také zmiňuji mé osobní zkušenosti s vegetariánskou stravou, syrovou stravou a bezlepkovou dietou. Návrhová část je zaměřena na změny ve stravování a je zde uveden můj vlastní jídelníček s doporučením na důležitost některých komponentů. V závěrečné kapitole je pomocí dotazníkového šetření vyhodnoceno, jak se stravují adolescenti a jak senioři. Toto šetření je rozděleno do několika okruhů, které se týkají jídla, nápojů, stravovacích návyků a informovanosti o produktech.

Abstract:

This bachelor thesis is focused on alternative nutrition in food, should reveal depth about the context of human health with nutrition. The aim of this thesis was to find out how people eat, if they are willing to give up the foods they know it is harmful, compare their eating habits to determine the extent of awareness of alternative diets of adolescents and the elderly. In the first part are defined alternative ways of nutrition and their characteristics. I deal in detail with a selection of alternative meals such as vegetarian and vegan food, divided food or raw food diet. Second part is focused on various food ingredients in the diet and their importance for the proper functioning of the body. For example, I mentioned the importance of fiber, vitamins or minerals. The analytical part focuses on the deep-rooted errors in nutrition. You'll also find an evaluation questionnaire that was physically passed both to adolescents and the elderly. In this part I am also mentioning my personal experience with a vegetarian diet, raw food and gluten-free diet. Forms part focuses on dietary changes and is incorporated herein by my own diet with recommendations on the importance of certain components. The final chapter is based on a questionnaire evaluation about the adolescents and seniors´ eating habits. This evaluation is divided into several areas relating to food, drinks, eating habits and awareness of products.
