Molecular Typing of Gram Positive Bacteria Isolated from Fermented Meat Products
Abstract:
Tato práce řeší charakteristiku vybraných grampozitivních bakterií izolovaných z fermen-tovaného masného výrobku Paprikáš. Fermentovaný masný výrobek byl vyroben dvěma odlišnými technologiemi, za použití stejné startovací kultury. Kmeny bakterií byly identi-fikovány metodou MALDI-TOF. Abstract:
The aim of this thesis is characteristic of Gram-positive bacteria isolated from fermented sausage Paprikáš. Sausage was manufactured by two different technologies, using the same starter culture. Strains were identified by MALDI-TOF method.
