Analytical and sensory evaluation of grape juices

Abstract:

Tato práce v literární části předkládá stručný popis chemického složení bobulí révy vinné a postupů chemické analýzy šťávy připravené z hroznů. Pro účely experimentální části byly připraveny mošty ze čtyř odrůd révy vinné: Muškát žlutý, Ryzlink vlašský, Cabernet Moravia a Dornfelder. Mošty byly připravovány v průběhu dozrávání při cukernatosti hroznů 16, 18 a 20 °NM. Následovala chemická a senzorická analýza zaměřena na sledování změn analytů v průběhu dozrávání. Chemickou analýzou bylo stanoveno pH, obsah cukru, titrovatelných kyselin a obsah kyseliny vinné, jablečné, citronové a askorbové. Senzorická analýza byla zaměřena na hodnocení moštů dle 100 bodového systému, dále byl hodnocen strukturní a mohutnostní profil a aromatický profil panelem deseti hodnotitelů. Senzorickou analýzou byl jako nejlepší (88 bodů) vyhodnocen vzorek z odrůdy Muškát žlutý (MZ 20) s cukernatostí 19,9 °NM a s obsahem titrovatelných kyselin 7,53 g·l-1. Jako nejhorší (66,7 bodů) byl označen mošt s označením CM 16 připravený z hroznů odrůdy Cabernet Moravia s cukernatostí 15,6 °NM a obsahem titrovatelných kyselin 10,02 g·l-1.

Abstract:

This thesis in its literature part presents a brief description of the chemical composition of grape berries and methods of chemical analysis of grape juice. For the purposes of the experimental part were prepared four types of must from different species of grapevine: Yellow Muscat, Riesling, Cabernet Moravia and Dornfelder. While preparing the musts, sugar content of the grapes was 16, 18 and 20 ° NM. After this, chemical and sensory analysis focused on monitoring changes in analytes during maturation followed. By the chemical analysis, the pH, sugar content, the titratable acids content and tartaric, malic, citric and ascorbic acid contents were determined. The sensory analysis was focused on the evaluation of musts according to the 100 points system, furthermore, the structural and strength profile and the aromatic profile were evaluated by a panel of ten evaluators.By the sensory analysis, as the best (88 points) was evaluated sample of the species Yellow Muscat with a sugar content of 19.9 ° NM and a content of titratable acids of 7,53 g·l-1. As the worst (66,7 points) was evaluated must marked CM 16 prepared from grapes of the species Cabernet Moravia with a sugar content of 15.6 ° NM and a content of titratable acids of 10,02 g·l-1.
