Possibilities of Freshwater Algae Utilization in Human Nutrition

Abstract:

Cílem bakalářské práce je zjistit a popsat možnosti využití sladkovodních řas v lidské vý-živě. Obecně jsou charakterizovány řasy používané v potravinářství (taxonomie, výskyt). Největší pozornost je věnována popisu chemického složení sladkovodních řas, které jsou významných zdrojem biologicky aktivních látek, jako jsou bílkoviny, minerální látky a vitaminy. Z důvodu obsahu dalších látek, které vykazují zdraví prospěšné účinky je kladen důraz na využití sladkovodních řas ve formě doplňků stravy i jako suroviny pro přípravu pokrmů v gastronomii.

Abstract:

The aim of this thesis is to examine the possibilities that freshwater algae present in the field of human nutrition. Part One looks at the taxonomy and occurrence of the various types of algae used in the food industry today. The thesis continues with a detailed exami-nation of the chemical composition of freshwater algae, specifically the major sources of biologically active substances such as proteins, minerals, and vitamins. Priority is given to the use of freshwater algae since these substances are generally considered to have the most beneficial health qualities. Typically they are formulated as commercial food supplements, or used as raw ingredients in the catering and food industries.
