Tato bakalářská práce je zaměřena na zjištění nejčastějších závad v systému HACCP (Hazard Analysis and Critical Control Points ? analýza nebezpečí a stanovení kritických kontrolních bodů) za rok 2010. This bachelor thesis is focused on finding most common defects in the system HACCP (Hazard Analysis and Critical Control Points) for the year 2010. The theoretical part contains four chapters dedicated to the issue of HACCP system and to the defects in it.First chapter introduces the requirements of some important legislative standards.
