Creation of educational materials and integrated thematic teaching on the subject of fats and healthy lifestyle

Abstract:

Diplomová práce je zaměřena na problematiku tuků a na zdravý životní styl. Teoretická část obsahuje rozšiřující učební materiál pro učitele základních škol, který se zaměřuje především na obecnou charakteristiku tuků, jejich vznik, rozdělení, vlastnosti a význam pro lidský organizmus. Důraz je kladen také na poruchy příjmu potravy a civilizační choroby související s nevhodným příjmem tuků potravou. Zmíněny jsou také faktory, které ovlivňují zdravý životní styl a metody používané pro stanovení tělesného složení. V rámci diplomové práce jsou vytvořeny pracovní listy, návrh ITV a laboratorní listy pro žáky základních škol, které se týkají problematiky tuků a zdravého životního stylu. Výzkumná část diplomové práce zahrnuje výsledky výzkumných šetření, které byly provedeny u učitelů chemie základních škol a žáků 9. tříd zádních škol. Předmětem dotazníkového šetření u učitelů chemie bylo zjistit jejich požadavky na vytvoření studijních materiálů a pracovních listů k tématu tuky a zdravý životní styl. Předmětem šetření u žáků 9. tříd bylo zjistit a následně srovnat jejich všeobecné znalosti, znalosti získané při hodině základního typu na základní škole a znalosti získané po odučení navržené ITV v oblasti tuků a zdravého životního stylu. V rámci integrované tematické výuky bylo u žáků stanoveno tělesné složení pomocí výpočtu BMI, kaliperu a bioelektrické impedanční váhy. Ze získaných hodnot bylo zjištěno procento žáků s podváhou, nadváhou, popřípadě obezitou.

Abstract:

This thesis deals with fats and healthy lifestyle. The theoretical part contains additional teaching material for elementary school teachers. The material focuses primarily on general characteristics of fats, their origin, classification, characteristics, and on their significance for the human body. Emphasis is put on eating disorders and lifestyle diseases related to improper intake of fats in food. Factors influencing healthy lifestyle and methods used for the determination of body composition are mentioned as well. Within the scope of this thesis are also worksheets, laboratory sheets, and an integrated Thematic Instruction Proposal created for elementary schools that relate to the issue of fats and healthy lifestyle. The research part of the thesis includes results of the surveys conducted among chemistry teachers at elementary schools and their pupils in the ninth grade. The core of those surveys was to determine the requirements of chemistry teachers dealing with creation of learning materials and worksheets discussing fats and healthy lifestyle. The core of another survey, which was conducted among students in the ninth grade, was to determine and then compare the students’ general knowledge of fats and healthy lifestyle, their knowledge gained during an ordinary lesson, and knowledge they obtained after the proposed Integrated Thematic Instruction lesson had been taught. Moreover, the students’ body composition was specified within the frame of the Integrated Thematic Instruction. The composition was calculated through BMI, callipers and bioelectrical impedance scales. These calculations were used to determine the percentage of students who were overweight, underweight, or obese.
